The easiest way to change the plan difficulty is via the weights involved - if you’re finding it too difficult, drop the weight and focus on proper form. If you’re finding the plans too easy - great news, it’s time to increase the weight! You are in a position to safely push yourself further. If you really want a new change, you can go to the Explore page and find a more challenging plan. However note that if you schedule in a new plan, you will lose progress on the current one. Your completed workouts will still be tracked in historic data, but you will have a new current plan with no progress.
